Butternut Squash Soup

Thanksgiving is right around the corner and this soup is a must have.

A sweet with a little kick at the end, mmmm… this was a huge hit.

Peel and cut 2 butternut squashes into eight pieces each. Coat in olive oil and sprinkle with a decent amount of salt, black pepper, and garlic powder. Bake it in the oven of 350 degrees Fahrenheit for one hour.

When finished cut squash into small cubes.

On medium heat brown the 1/3 C diced onion in 4 Tb of butter.

Once browned add in 3 C water, 4 tsp chicken bouillon, 1/2 tsp oregano, 1/4 tsp black pepper, and 1 1/2 tsp cayenne.

Bring to a boil and cook for 20 minutes or until the squash easily cuts through with a knife.

Puree squash and cream cheese in portions with a blender or food processor. Add water if needed.

Return to sauce pan and heat thoroughly, add 1/4 C brown sugar. Add more spices to your desired taste.

  13. 1/4 C brown sugar
