Alfajores

These delicious caramel filled cookies just seem to melt in your mouth!

Preheat oven to 325 degrees Fahrenheit.

Whip 3/4 C softened butter until fluffy.

Sift in 2 cups of flour and 4 tablespoons of sugar.

Combine together with pastry cutter.

Refrigerate dough for 20 minutes. 

Roll out cookie dough about 1/2 inch thick. 

Cut out circles about 4 inches in diameter. 

Place them in the oven for 10-15 min and don’t let them brown at all!

Let them cool and dollop a spoonful of Manjar Blanco (Recipe above!) in the middle and sandwich another cookie on top.

Traditionally they are topped with powdered sugar and the sides can be rolled in coconut shreds.

Ingredients
  1. 2 C Flour

  4. Manjar Blanco (Link to website on blog or Dulce de Leche at any Hispanic store)
