Blueberry Crumb Cake

Blueberries are one of the healthiest foods on earth, if I coat it in flour and sugar am I still being healthy?

It doesn’t matter because this cake is so delicious!

Preheat oven to 375 degrees Fahrenheit. Grease an 8 inch square pan and set aside.

In medium bowl, combine 1/2 C brown sugar, 1/2 C Flour, 3/4 tsp cinnamon, 3/4 tsp nutmeg, 1/2 C softened butter and mix well. Set aside. 

In another bow, whisk 2 C flour, 2 tsp baking powder, and 1/2 tsp cinnamon.

In a large bowl cream 1/4 C softened butter and  3/4 C sugar. Add 1 egg and 1 tsp vanilla. Add flour mixture and 1/2 C buttermilk alternately.

Stir in blueberries and be careful not to break them. 

Spread batter into pan and sprinkle on the crumble topping.

Bake for 60 minutes, use a toothpick to see if it s ready. Cool before serving.

Ingredients
  1. 1/2 C Brown Sugar

  5. 1/2 C Softened Butter
  6. 2 C Flour
  7. 2 t Baking Powder
  8. 1/2 t Cinnamon
  9. 3/4 C Sugar
  10. 1/4 C Softened Salted Butter
  11. 1 Egg
  12. 1 t Vanilla Extract
  13. 1/2 C Buttermilk (mixed with 1 T vinegar, let sit for 5 min before use)
  14. 3 C Blueberries (feel free to use frozen without thawing)
