Pumpkin Cinnamon Rolls and Pecan Pie

Double Whammy, 2 killer recipes for the fall time season!

Pecan Pie

Preheat oven to 350 degrees Fahrenheit, place 1 C chopped pecans in a pie crust.

Place 1 C sugar, 3 Tb brown sugar, 1/2 tsp salt, 1 C corn syrup, 1/3 C melted butter, 3 beaten eggs, and 3/4 tsp vanilla together in a bowl.

Pour mixture over pecans and cover pie gently with foil. Bake until filling is almost set, about 60 minutes. Remove foil and bake until edges are golden brown. Cool overnight.

Ingredients
  1. 1 C Sugar

  8. 1 C Chopped Pecans

Pumpkin Cinnamon Rolls

In large sauce pan, combine 1 1/2 C milk, 1/2 C oil, and 1/2 C sugar. Heat until bubbles form and remove from heat and let sit for 60 min. 

Sprinkle 1 pkg yeast after the hour is up and let sit for 5 min, stir in 1 C of pumpkin puree. 

Combine 4 C flour, 1/2 tsp cinnamon, 1/4 tsp nutmeg, and 1/4 tsp ginger and stir into pumpkin mixture until it just comes together. 

Cover with plastic wrap and let sit for 1 hour. 

For the frosting combine 8 oz cream cheese, 1/2 lb powdered sugar, 1/4 C whole milk, 2 Tb melted butter, a dash of salt. 

For filling combine 1/2 C sugar, 1/2 C brown sugar, 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp ginger, 1 C finely shopped pecans.

Preheat oven to 375 degrees Fahrenheit, and great 4 pie pans. 

Turn out dough onto a floured surface (dough will be sticky so use flour to handle).

Roll out dough to about 10 X 30 inches and pour 1/2 C melted butter over the rolled out dough. 

Sprinkle filling mixture to cover the entire surface of the dough. 

Carefully roll up the dough scrapping under as you roll so the dough will not stick to the table. 

Use floss to cut the pieces, pull under, cross, and pull to cut on buns. 

place in pans and let rise until almost doubled in size. 

Bake for 15-20 minutes or until edges are golden brown. Let cool and ice them.

Dough
  1. 1 1/2 C whole milk

  6. 1/4 tsp ginger
  7. 1 C finely chopped pecans
